Javier Parada es Profesor Asociado de la Facultad de Ciencias Agrarias y Alimentarias de la Universidad Austral de Chile (UACh). Además, forma parte del ICYTAL.
Es Ingeniero en Alimentos de la Universidad Austral de Chile y Doctor en Ciencias de la Ingeniería de la Pontificia Universidad Católica de Chile.
Es responsable de asignaturas como Introducción a la Industria Alimentaria, Evaluación Sensorial de los Alimentos, Diseño y Desarrollo de Productos Alimenticios, y asignaturas relacionadas con el trabajo de titulación de Ingeniería en Alimentos, entre otras en donde colabora.
Su línea de investigación se ha centrado en el estudio de la relación entre compuestos bioactivos, microestructura de alimentos y propiedades saludables, especialmente en relación a digestibilidad de almidón y respuesta glicémica, tema en el cual cuenta con numerosas publicaciones. Ha conducido y colaborado en proyectos financiados por FONDECYT, FIC-R Los Ríos, entre otros.

Javier Parada is an Associate Professor at the Institute of Food Science and Technology (ICYTAL), Faculty of Agricultural and Food Sciences, Universidad Austral de Chile (UACh).
He received his Bachelor’s degree from UACh and completed his Ph.D. in Engineering Sciences at Pontificia Universidad Católica de Chile.
He is responsible for teaching the subjects of Introduction to the Food Industry, Sensory Evaluation of Foods, Design and Development of Food Products, and other subjects related to the thesis project. He also collaborates with other subjects.

His research interests focus on the study of the relationship between bioactive compounds, food microstructure and healthy properties, especially regarding starch digestibility and glycemic response. He has led and collaborated in projects financed by FONDECYT (ANID), FIC-R Los Ríos, among others.
