Consumer willingness to pay for cheese with a social sustainability attribute
Consumers are willing to pay a price premium for a food product (cheese) with a social sustainability attribute. The figure shows that the mean willingness to pay (WTP) is 7.5% over the average price of cheese (in US dollars), although combining relevant variables and changing values over their range shows that firms can obtain up to a 12.9% price premium. Besides, results indicate that age, previous knowledge about social sustainability practices and income are the only variables that influence the WTP for a social sustainability attribute. It is important to note that firms must be aware that these results cannot be extrapolated to other foods because WTP is specific for each product. Therefore, any attempt to use these results in other products, especially if they are included as part of a commercial strategy, could lead to wrong results.
